Our dishes and menus are changed on a daily basis, as we make them dependent on the optimal primary food product.
Each season offers its own harvest. The natural biological cycle of Mother Nature presents us with the basket of commodities. We go along with the seasons.
Freshness, flavour, taste, the degree of ripeness and visual appearance of the food products determine when the right moment has arrived to process them. This means that the majority of our dishes cannot be prepared daily or in every season.
Our selection of dishes is completely dependent on our dedicated suppliers, gatherers, breeders, gardeners and farmers, who supply us with the freshest ingredients on a daily basis. These products are organic and come only from forests, fields, pastures and waters of the region.
We insist on using only regional products. Since the distance to us is very short, we can guarantee maximum freshness.
Therefore, we work closely only with producers of the region, who live in harmony with nature. These passionate people inspire our daily work.
In our kitchen the food product itself determines which dish will be prepared.
Our first consideration is not to decide which meal should be on the menu, and then consequently obtain the necessary ingredients, but we place the product first and the dish results direclty from the product. But this does not mean that we improvise! We create our dishes with devotion and are guided by the goal of perfecdtion.
So just lean back and let us surprise you. Our aim is to provide you with an unforgettable sensational taste experience.
We also offer a "Surprise Menu". In this case you put your complete trust in our hands and with information about your tastes and how many courses you would prefer, you just sit back and let us do the rest! The entire Schindlhaus-Team will make sure you will have an unforgettable evening!
In addition to this, our menu offers an excerpt from our new down-to-earth, classic Austrian recipe book entitled "Hüttenkochbuches" ("Mountain Hut Cookbook" which was published in the fall of 2010.
Our midday-menu consists of 2 courses and a Nespresso Grand Cru, which is offered daily from 11.30- 1.30 p.m.
Every Sunday at lunch we prepare the "Austrian's Favourite Menu":!
• "Fritattensuppe:" : Beef soup with pancake slices and vegetables • "Wiener Schnitzel": breaded veal fried in buttered oil with parsley potations and cranberries or • Freshly-fried trout with leafy spinach and mushrooms • "Kaiserschmarrn": pancake cut-up and sugared with raisins, rhubarb compote and vanilla ice cream
